This is urgent! Whether you’re a local or a first timer in Tampa, whether you’re on your own or with your family or crew. Whether it’s a weeknight or weekend, and whatever the weather- you will not want to miss Edison: Food + Drink Lab. Get ready for the chicest and savviest in dining, and whether you like to blend in or stand out with your own tastes, you will be a match for this spot. Before dazzling you with the extensive list of (well-deserved) awards and discussion how to get your party started. Let’s dive straight into the menu to whet your appetite and inspire your senses!
Edison Food + Drink Lab: The Menu
At lunch, check out the amazing Asian Fusion items! Start with a Kung Pao Beer Belly (korobuta pork belly, brussels sprouts, pineapple, black garlic, cashews, peanuts, sweet soy porter glaze). Or you can try the Wood-Grilled Korean Chile New York Strip Steak + Pineapple Tacos (shredded cabbage, sesame shiitake bean sprout salad, spicy gochugang, micro cilantro). If you’d prefer a salad, Edison sets the bar exceedingly high with the Charred Octopus Horiatiki Salad (toybox tomato, watermelon, cucumber, french feta, fresh herbs, red wine tapenade, yuzu oregano vinaigrette).
Any which way you slice it, expect a fresh unification of worlds that energizes and delights you! Just make sure to save room for your entree. There’s a wide selection of wonderful sandwiches; we love the Crispy Barrelfish Banh Mi (daikon carrot pickle, cucumber, jalapeno, cilantro, fish sauce vinaigrette, white soy togarashi mayo, toasted baguette, hand-cut fries). There are also impressive entrees; the Wood-Grilled Tangeringe Compressed Eggplant (masala cashew curry, coconut lemongrass basmati, gingered haricot verts) has even very dedicated carnivores dining vegetarian!
Edison Dinner Menu
For dinner, choose from cold or hot starters. On the cold starters, the simply titled Burrata is an experience you’ll want to have (heirloom tomatoes, charred shishitos, pepita pesto, and chipotle lime sorbet) and on the hot starters side, dive into the French Onion Bone Marrow (porcini-crusted bone marrow, french onion confiture, dijon fines herbes salad, cheese toast, porcini foam) for a sophisticated start to your Edison adventure! When it comes time for the dinner entrees, be prepared to be floored by anything you order.
We are especially fond of stepping outside of our dining comfort zone, so the Black Pepper Sage Magret Duck Breast (maple roasted butternut squash, sweet potato mascarpone cream, cider-braised dino kale, butternut squash cannoli, cranberry agro dulce) is our adventure of choice that brings something new into something classic, so much so that it is entirely re-imagined. For those seeking an elevation of an old favorite, hands down go with the Wood-Grilled Black Angus New York Strip (shropshire blue potato mille-feuille, watercress, heirloom cherry tomato confit, duck fat cippolini, torched white balsamic sabayon) and take delight in one of the most extraordinary steaks Tampa has to offer.
For desserts, definitely do peruse the menu even if you’re on the full side from your meal! The fresh ice creams (chicory coffee, brown butter, or pumpkin foie caramel will have you swooning) and sorbets (mulled wine or pumpkin pear) are light enough to enjoy for one. And if you’re sharing or just really feeling the desire for a decadent sweet, it doesn’t get much more enjoyable than the Chocolate Peanut Butter Bar. It comes with the house vanilla wafer crust, banana custard, and chicory ice cream. Again- swoon!
And for happy hour and other drink desires, what would a place named after a famed inventor be without an equally sharp mixology lab and beer/wine menu? Toast to the Scientific Method (Single Prop Coconut rum, Appleton Estate Reserve Blend rum, Gifford Orgeat, pineapple gastrique, coconut cream, heavy cream, fresh lime) or the Ultraviolet (sage infused-wonka voka, St. Germain Elderflower liquor, Giffard Creme de Mure liquer, fresh lemon, soda water, lavender) and get in the Edison spirit!
Edison: The Award Show
So now that you’re up to speed and probably getting a little hungry, check out this place’s creds. Chef Pierola is the visionary behind the restaurant and a 5x James Beard semi-finalist. The restaurant has won the Florida Trend Golden Spoon 5 times from 2014 to present (congrats on the win from 2019, awarded two days ago!). The Tampa Bay Times Laura Reiley’s Best Burger in 2018, the #1 TimeOut Tampa Restaurant in 2018, Best of Metro in 2018, Trip Expert’s Choice in 2017, OpenTable Diner’s Choice 6 consecutive times from 2014-2019, the Wine Spectator Award of Excellence 5 consecutive times from 2015-2019. The Food Network’s Best Ice Cream in Florida in 2013, and Restaurant Hospitality’s Best Cocktails in America in 2015 and 2016.
Tampa has a love affair with this special place, and once you visit, you’ll come back again and again. Just as the restaurant prides itself on innovation, you can reinvent your entire expectations and dining experiences every time you come here. But we don’t blame you if you find your favorite(s) and stick with them.
Finalizing Your Visit to Edison’s
Some things to know before you go: it’s not a formal spot, but you’ll want to change out of sweats and into something more going out worthy! It also is not huge, so go during slower times for a quieter experience or make reservations if you know you’re headed to Edison when it’s poppin’ and busy. Also, have a good talk/listen to your waiter (the staff is extremely attentive and knowledgeable) who will let you know which dishes are seasonal.
Edison is on the dimly lit side, so it makes a wonderful date night spot but can be tough if you’re out with your girlfriends or crew. Make sure the flash is on if want to take a bunch of selfies. If you’re looking for an event, it comes highly recommended by Yelpers, with the caveat of the parking. The restaurant’s parking lot is fairly small but they do have street parking and additional parking nearby. So you don’t need to worry if you’re planning or attending an event, just call ahead if you have additional questions about parking (including valet). Just be aware that there is parking if not in the exact lot for the restaurant than very close by.
The Superior Service
Service for large groups is as strong as it is for small groups. Just remember, the larger your group (if not an event), the more advance notice you’ll want to give when booking! Moreover, if Edison is a place you plan to bring the family, just know that they will most certainly accommodate, but it’s not a place “for the kids” so to speak. If your family is filled with adventurous eaters and have a strong sense of decorum (toddlers might find it tough here unless you’re stopping for a short time), then carry on. Most will find that they enjoy the Edison experience for the delight and pleasure that it is.
For Visitors and Locals Alike
We love Edison as a spot for visitors to bring locals and guests. The locals you’re with will enjoy the experience and if they haven’t been before, they will certainly return, and you’ll really (subtly) impress with your impeccable knowledge of Tampa’s best offerings! Hyde Park is right by Edison, so if you’re with a date or need a post-meal stroll, cruise on over to the Hyde Park Village and enjoy the beautiful scenery. Also grab another drink, or catch a film at the CineBistro where you’ll watch in style (super comfy, epitome of luxury high back leather rocking seats).
Check the Hyde Park events schedule for some other fun things to do- such as this month’s Color Me Mine Kid’s Night Out Ornament Painting adventure. For some inspiration, check out this section of the Arts Tampa Bay website! Edison also makes for a fabulous pre-concert meal. If your night on the Tampa town has you headed to a concert hall or venue give them a try! If you’re on a tight schedule, just let your server know. Once they know, they can be extra aware about your next destination and how to direct your dining.

P.S.- and this is incredible news! Chef Pierola is opening a new spot soon called Counter Culture. Further more, under the following description from the site which is currently in major tease mode: “A modern homage to classic counter dining and its bar stool kinship between diners and the kitchen. Elevated kitchen bar dining, open air mixologist bar, Florida patio seating, and sparkling Bay views.” It will be located at 2909 W Bay to Bay #100. We look so very forward to welcoming another dining gem from Chef Pierola. Looks like we have lots to eat in 2020… best save some room from those holiday dinners now!
